  • 10 cups of water
  • 1 white onion; quartered
  • 2 medium tomatoes; cubed
  • ½ carrot; chopped
  • 1 bell pepper; diced
  • 2 green onions; diced
  • 1 small zucchini; cubed
  • 5 cloves of garlic; minced
  • 16 oz. chicken
  • 2 bay leaf
  • 1 cup fresh parsley; minced
  • ½ cup fresh cilantro; chopped
  • 1 ½ tsp. salt



  1. Pre-heat the Princess Heritage® 9-Qt. Dutch Oven.
  2. Add a bit of water and the onion and let it sauté for a minute, stirring constantly.
  3. Add the rest of the vegetables and sauté for one more minute then add the remaining water, chicken and herbs.
  4. Stir well and let the water come to a boil.
  5. Once the water boils, cover the pot and lower the temperature to medium-high. Cook for 30 minutes.
  6. Turn off the heat, remove chicken pieces and set aside.
  7. Proceed to drain the vegetables and store the liquid (chicken consommé) in a 4-Qt container for later use.
  8. Refrigerate until needed.
